Well, my colleague in the picture got the deer, but since it's my place, he has to share.Gonna be some good eatin' there, Ross!
Backstrap. He's gonna pull it before the rest goes to the local butcher for processing & packing. They charge $50 to do the whole deer, which took us over 12 hours the one time we tried to DIY. Having it all vacuum packed and professionally labelled also does wonders for the spousal acceptance factor.Tenderloins or back strap first?

I think it could have been, but TBH, I wasn't impressed with the sound. I'm not sure why, but all the really high-pitched stuff sounded somewhat distorted to me, as though there was some clipping.......and I love Joe!!!....The sound MUST of been fantastic!!!!
