Blend herbs, unsalted butter, honey, etc.
Inject and cook
Baste and cook
Or smother after cooking
Apricot, raw honey, a hint of lemon juice and real unsalted butter blended make a fantastic replacement for bernaise.
If you choose a lean cut, baste it in butter using a brush while cooking.
It shpuld turn out rich and tender.
Add shaved lemon zest to the butter for a nice, but not overwhelming lemony, floral tone.
For extra creamy put heavy whipping cream with some chives, garlic, oregano and a teeny bit of cilantro into a magic bullet.
Blend until you have a soft butter.
Chill.
Then use it for cooking and basting (sparingly) and top off with a pat when plating.
Garnish with 3 to 5 sprigs of fresh oregano.
And maybe a slice of sun dried tomato or two.

Honestly, just get a good cut and don't overcook it.
Some salt helps, but not required.
Sea salt could be used. Supposedly not as bad for you.
Anything else takes away from the taste of the meat.

More than welcomed.Thank you all for the suggestions. I will stick with herb, apricot, and unsalted butter for the cooking. I think the sauce suggestions sound wonderful. I will make him up some of those on the side and let him try each of them.

Honestly depends on the cut you choose. Red wine, balsamic vinegar might be things you already have without running to the store. Little fresh garlic maybe...Does anyone have recommendations on steak for someone on a low-salt diet? I have an elderly widower neighbor that I would like to cook a steak dinner for without added salt.

If it's a good cut you won't need much seasoning...

If you are going to run to the store they have a number of salt-free seasonings. Maybe one sounds good...

Yeah, I'm just going off the top of my head....You would be surprised at how much sodium is in things you would not have associated with it. Hence, my quandary. I did quite a bit of research on ingredients I could think of. Balsamic vinegar contains more sodium than any other type.
I feel sorry for people who are on a low sodium diet.
