I made two blog categories. But I can't see how to change the previous uncategorized blog entry. (how to edit that so to speak)

When you get into your blog, there should be a pencil to the right top. Click on that, that allows you to edit your blog 
First you need to create your categories. After you have done that, click that pencil, then click ADVANCED. You will be able to choose the category that you have created.
To create a category, on the right side of the page, there is pencil above the box that shows categories. Any that you create will show up in the advanced editing. Click the one you want and save changes.

The top part doesn't have a pencil to edit. I want to delete that. I put it into the juice category, and now I need to delete that top part, because I can't edit it, or add to it. So total there should only be 3 entries right now. Oh, and thanks for helping me Robin!

I rarely do blogs. But this one seems a tad more difficult. Thanks for trying to help. You did get me in the right direction though! I have 3, in the proper category. Now if I could just delete that top piece, without deleting all 3 entries, I will be satisfied...lol. I will ask Dusty later. Thanks for the suggestion.
On the left side of your blog, click the pencil to edit blog categories.
You'll then be presented with a screen that has more options. On the left, select "Edit Title and Description". That should allow you to remove the top bit on your blog.
