I think it would be cool to see a study done on it so we could know for sure, but I don't that the
coils get hot enough to change them. i think its more of, get a hot pan and drop some water on it, and it gets stuck in like a limbo phase where the liquid doesnt need to be at 212 (for water) but still acts like a gas. At least thats how I always pictured it in my head.
