When building coils how critical is the spacing between the wick and the coil? Should the coil touch the wick material or should there be a space between the two? And, if so, how much of a space?

It's pretty hard to make a coil without the wire touching the wick although it is possible but when the wick gets wet some wicks will expand and touch the coil. If you are using silica you don't have to worry about it just don't dry burn for too long. Do not dry burn cotton because it will burn in an instant.
I use a wire mesh wick in my rebuildables, and find I prefer the wire to touch the wick, just not wrapped very tightly. You just have to mkae sure that your wick is oxidized very good so as to not create a short anywhere the wire comes into contact with the wick. IMO this produces the best VTF(vapor, throat hit, flavor) but seems to gunk everything up a little quicker. Tho that too may just be the juices I enjoy vaping
