I had a discussion with someone about natural flavor concentrates from vendors like Flavor West, Capella, etc. He says that all natural flavors come from distillations, etc. of the actual item that is listed on the label. I contended that most concentrates are simply made from flavor molecules that weren't synthetically created from other molecules, that the source was natural, but may have had absolutely no relationship to the item that the flavor is supposed to represent. He was pretty adamant that he was right, and what I said was completely off base.
Which one of us is right, or are both of us off base, and can you give a better explanation?
