Sounds to me like the coil is shorting on the coil head housing............ Oh, and a week is not too soon to have to change a coilhead or at least need to rewick and clean the coil. FWIW I get 1 day per, servicing, 2 if I'm lucky. Granted I use RBA attys so I just change the wick and clean the coil. The sweeter and darker the juice the faster it gets dirty.

Wait uh-.. So just to clarify, the coil you put in was .6 but it's reading as .2?

Because I'm seeing that they sell .2 and .6 ohm coils, but not .4 ohms. Are you sure the .6 ohm coil you put in wasn't a .2 ohm coil? Pretty sure the 2 coils included with the tank are .2 and .6 ohms.
The first one read .6 all week. The second was jumping from .2 to .3 to .4 and back down

The second coil was probably/definitely the .2 ohm coil. Coil variances are pretty normal, particularly with these pre-built heads, but from .2 to .4 is a bit of a large jump. I'm used to seeing as much as .15 +/- but as you can imagine, if we're only dealing with the digit in the tens position, it's a bit harder to judge. Correct me if I'm wrong, but the iStick 50W doesn't show the second digit, does it (ie: it says 0.2, not 0.25).

My guess is that the coil, from the start, was on the higher end of .2. Given coil gunk and various other factors (including quality control/manufacturing errors), plus the fact that your device is rounding the digit in the tens place, PLUS the fact that the iSticks are somewhat notorious for fudging resitance readings (Google "iStick 50W resistance wrong" and you'll see what I mean).. I think we can say it's "normal" but not "ideal" -- I don't think it should cause any problems. Future heads might be more reliable, so if it's bothering you (ie: if the jump in resistance drastically changes the voltage, which is possible especially at lower resistances) my best suggestion would be to switch to a new head.

The best you can hope for in a case like this is consistency. If it's changing the resistance from one hit to the next, that's gonna become a nuisance pretty quickly, as your device is going to be calculating new voltages and the vape might be unreliable. If it's consistently reading the coils as .15 higher than they really are, you can sort of compensate for that with your voltage if you've been made aware that's an issue.
