Dave Matthews Band, Live in Central Park, covering All Along the Watchtower. Brilliant.
No Video just the song but this cover of The Foundations' "Build Me Up Buttercup" by Jack Turner exposes an alternate interpretation of the lyrics. I find it truly enjoyable though melancholy.
"Everything Breath You Take" by The Police also has a darker side explored by many artists covering that 1983 Grammy Song of the Year award winner written by Sting.

I dig it! I don't know the original song/lyrics well enough to know what has been changed - but - awesome awesome awesome.

This somehow works.. don't know how... Ignore the ojos locos (crazy eyes) Theres even a metal mandolin
the Verse is kinda weird... But then Chorus hits and is a jammin.
