So I set out to dial in the percentage of my flavors, but not much success. I tried the method of 5 mil of water, add drops of flavor and taste. Then when the taste seems close make a pg/vg batch and vape test the single flavor. I never did get a "pop" that tastes like almond, even at 15%.
Tried a couple of flavors, even just started going direct to making up a 3 mil batch of a flavor at 5,then 10 then 15 percents and still didn't get a wow moment of that tastes just like xx.
So my taste buds are pretty good, what could I be doing wrong? Am I just expecting the wrong outcome/taste?

Likely you've overflavored -- which can numb your taste bud for a flavor for a week or two. Set them aside a while and then try starting again around 2%. It's rare to see anyone going much more than 5-6% with FA.
I will try that. Is the flavor suppose to have an actual almond or peach etc vivid taste to it?

Sure they are supposed to taste like what they are called, but even when the percentage is good, some people will report various flavors from various brands do not. It really is that subjective, which is one of the difficult aspects of DIY; there are few if any one size fits all recommendations. With that said, I will agree with LoveVanilla in that I recently got some FA 7 leaves, which FA recommends at 1.5%. I tried it at 2% and that is too strong for me as a standalone and comes across somewhat perfumey. I have dialed that down by mixing with other juices I made and find it makes a notable and welcome contribution at around 0.5%.
