That is the same way that I am seeing it, but are curious to know the conditions also. Does it also mean that it is not as harmful as Diacetyl? Or is that what they would like us to believe?Do I understand it correctly? ... I have no flavorings that contain Diacetyl. Acetoin and Acetyl Proprionyl are substituted for Diacetyl. Under certain conditions these subs can catalyze into Diacetyl. So, Acetoin/Acetyl Proprionyl are ok as long as those conditions are avoided.
Obvious question then...what are those conditions?
