I just purchased an eGo-C Twist, which I can change the voltages for whatever I like I assume. But I also got a Kanger Mini Protank 2 which comes with one 1.8ohm and on 2.5ohm coil. Which is cool, I guess I can tinker with my wicks and 32 kanthal wire on them so I don't need to buy new ones all the time.

My question to you guys is that my battery goes from 3.2 volts to 4.8 volts. I'm using the 2.5ohm coil on my battery, but I'm wondering. What voltages should I use for the 2.5 coil and what voltage should I use for the 1.8 coil? I'd like to still be able to use my old 1.8-2.0 tanks with this new battery if I can.

Just cut it all the way down and move it up till you find your sweet spot. you can still use your 1.8 and 2.0 coils as well
True that!
It also applies to VW mods as well for your reference. Start low, if you get bad tastes, bring back down one notch and you are there.

Another easy rule of thumb to remember is to take the ohm rating and add 2 for the voltage to start. So with a 1.8ohm coil you could start around 3.8v and move up and down from there. There's nothing set in stone saying what voltage you have to run. Just experiment a little bit and find what voltage suits you.
