But wont the battery vent if the amps are too high?
You are using a regulated Mod right? the VTC5 2 of them in one mod if genuine is a 20 AMP battery should handle close to 120 Watts. Doubt you will go that high.

Or a single battery mod around 55 to 60 watts

A regulated mod is going to be safe for the ohm range it works over. It won't fire a coil with a short or too low for it. The REGULATED mod will have built in protection

Did you buy them from a trusted vendor of batteries?
Yes liion whole sale. If I'm building 2 coils with those batteries cant they vent or explode if the amps or volts are too high for them? How much can 2 vtc5a handle tdd together in a series wired mod?

Yes, but your regulated mod won't let the amps get to high. Your batteries, if genuine, should be able to safely deliver enough amperage for 75w each down to cutoff voltage of 3.2v. if you want safer, than Don use the Smok mod. With Li-ion batteries, there is no safe. As even an iPhone can melt itself.

55 to 60 watts per battery in device for that 20 amp battery

So the batteries are able to go 20 Amps continuously and I have 2 why does my mod read 20 Amps for only 75 watts does that mean 75 is the max wattage I can do or can I go over that cause of the 2 batteries

Coil resistance is irrelevant when using a regulated mod. Choose the batteries by the amp rating and the wattage setting that you'll be using.

WATTAGE PER SINGLE BATTERY on REGULATED MOD:
(Total wattage doubles using 2 batteries; Triples using 3 batteries.)

The OP stated using VTC 5 'A' cells, which have a 25a CDR.

The amp reading displayed on the screen is a worthless output amp's ( from chip to delivery device ).
It has nothing to do with input amps ( from batteries to chip).

Your questions have been answered in previous posts & links, let us know if you need clarification.

How much with 2?
75 Watts x 2 = 150 Watts

As Topwater Elvis says, pay no attention to the amp readout on the display screen. The amp reading displayed on the screen is a worthless output amp's (from chip to the juice delivery device). It has nothing to do with input amps (from batteries to chip).

Watch the video I posted above for a more detailed explanation.
