    Today is my Friday. I'll be off tomorrow to cook and get ready for the grad party on Saturday.

    I'm guessing around 30-40 most likely. Most people don't eat a lot or stay a long time at grad parties. I read that it was good to calculate 6-10 ounces of meat per person.

    I got three Boston butt pork shoulders and the were on sale which is nice. I mixed the brine and have them in the refrigerator. One of the bags I just bought had a tiny hole in it which made a mess I had to clean up. The forecast is for more rain tomorrow. I’m at least going to smoke them and if it’s raining too much then I’ll finish them in the oven.

    It hasn’t rained yet but is supposed to. I just wrapped the meat to finish cooking it. I tried a different brine and run than my normal this time. I tore a little piece from the outside and it was pretty darn good. The smoker was running kind of hot today. I think they are going to cook pretty quick. They are at 140-150 already.

    It’s tomorrow. I cooked the meat today and tomorrow I’ll cook cubed potatoes. We are going to sample the pulled pork for dinner tonight.

    Where is the invite for the BBQ? Sounds great Hitt, I did get a few smoked meat meals in on this trip. Well I'm at DIA flying out in about 2 hours see you all later.

    PT, you’re welcome to come to the grad party. I’m super tired. I started at 7:00 this morning and just finished pulling the meat on all three. My wife cut up fruit and vegetables. I think age is starting to catch up with me a little.
