How Does Mt Baker and others do this?

I'm pretty sure they do their flavors as 'separate entities', which makes it easy to add a balanced ratio of all flavors involved. Example -

Say their Banana Split is 10% Banana, 5% Chocolate, 5% Vanilla Ice Cream. They simply make gallons of "Banana Split Flavoring" by adding 50% Banana, 25% Chocolate, and 25% Vanilla Ice Cream, and add this at 20% whenever someone places an order for it. If you get a flavor shot, they up it to 22% or something.

That way, your flavor shots translate into an balanced increase in flavor as opposed to doing something silly like 12% Banana, 7% Chocolate, and 7% Vanilla Ice Cream, which just changed the recipe to 46% (from 50%) Banana, 27% (from 25%) Chocolate and 27% Vanilla Ice Cream. It still tastes terrible sometimes.

It works the same for them as it does you. The difference is you know you don't want that while a buying public thinks it's great.

I think adding cinnamon to chili is a horrible thing, but there is a whole chain that does just that.


Who the heck adds cinnamon to chili? That just don't even sound like a good idea

I add a dash of cinnamon to both chili and spaghetti sauce. Not so much that it actually tastes like cinnamon, just enough to add some body and depth to the tomatoes. A scant sprinkle of cocoa powder also works really well in chili.

Ah, you're from Texas...in Cincinnati (skyline chili) and in Detroit (the dueling Coney Island dog places downtown) have cinnamon in their chili as well as clove and allspice.

i think you are giving too much credit/effort put into it (i know it was an example but.....) they use "banana split" flavor concentrate...so a flavor shot is just an extra drop/s of the concentrate.. so there IS a quite a bit of money in the extra shots....$.25 for something that cost them fractions of a *cent*...especially since they are buying in bulk :)

I think the recipe should be able to stand on it's own....BUT the companies listed...their prices are low enough that i don't think it is the recipe they are banking....
to me if extra flavor shots are offered....is it weak to begin with?
on the one hand if you don't like it "well you ruined it with extra shots" but more than likely "this juice is yucky...all of that company is yucky"

AND- they serve it over pasta!
Where I come from they call that spaghetti red and it is not suppose to be your standard pasta. But I love it. However I can't speak to the chili you are talking about, I've never tried it. I just love a good chili over pasta. :)

The reason the flavor shots are available is we all have different taste buds. Whats good to me with no extra shots is fantastic for someone else with two shots. Us humans can't agree on much at times so taste in a juice is no different. The basic theory is they have a recipe and the shots are just adding to the percentage of the overall recipe as mentioned.
