This might just be me... but here goes. I'm having a few issues when it comes to throat hits. I'm finding the hit changes all the time, during the same vaping session. Example: one puff and it's too strong (making me cough and my throat tickle), and the next it's absolutely fine, if a little weak. I make sure the device is always charged and nice and full with the same flavour liquid. I'm also making sure to drink lots of water while I vape as I know this can cause the harshness. Even so, I feel I never quite know when the hit will be too harsh or not and it's making the vaping inconsistent and not so enjoyable. Do you think there's a problem with my device possibly? (I'm using the curve 20w). Thanks in advance for any responses! :)

It's not from one day to another - it happens within the same vaping session. Sometimes it vapes really smooth and then the next hit it's harsh and tickly...
I changed the coil head about a week ago but have switched from a harsh Ice Menthol to Apple... could that be a possible reason?

It very well could be, so you changed the coil head and flavor (apple ?) and within the first hour it changes ?
Is the apple a different brand (manufacture) same nic level and pg/vg ?

My vape is described in the signiture section below. I get the most consistant throat hit from a fresh wick and coil. It also helps when the wick is super saturated and I don't draw too hard. I haven't figured out how to have every puff be exactly the same. One of he reasons I like rda's and rebuilding is I can have a new coil as often as I want without concern about the cost and can super saturate the wic without leaking.

PS Several days ago I switched from Titanium to Stainless wire. So far I'm liking the difference, including throat hits but too soon to tell why it working better.

One of my ADVs is 7 leaf from EC Blends, reduced pg, 6mg nic @ 7watts in a KF 3.1. After filling the tank I get a similar effect as what you are describing. The taste starts out fine but after a few minutes vaping the taste changes (weak taste) taking a couple of dry puffs or loosening the topcap to allow a bubble tends to bring it back to normal. This may repeat until the tank is ~2/3 full, the remainder vapes normally. I suspect that the cause is building too much vacuum when full and not allowing sufficient juice to the wick to keep it fully saturated. Just my theory....:)
