I've had the same issue with my vtr and almost had it exchanged until I found it was a bad batch of replacement coils. After I packed up my vtr and switched to my svd I got the same behavior and that's when I knew there was only one common denominator. After swapping out the coil for a new one I could replicate the problem on all my devices with the bad coils. Why this happens I don't know but my guess is something in the coil starts touching something is not supposed to causing the resistance to jump all over the place.

If you have a tank that is reading correctly try sticking with it for the week to see if that one coil head causes the same issue. If that's OK then it could very well be a bad coil. One thing I've learned in these few short months of vaping is to not immediately blame my device for every issue.
