Is cappella v2 any real difference?

Hi.
I was wondering if anyone using capella flavors noticed any difference in flavor quality between capellas version2 in comparison to the regular line? I mean i know theres a difference in the composition... but im just interested to know if v2 is lacking in any way.
Would appreciate any info on the subject if anyone has to offer.

as far as the Vanilla Custard goes...yes, to me, there's a very big difference. V1 is creamy, eggy and delicious. V2 is slightly chemical and lacks what I like about V1. I could probably get used to it if I had to, but I don't have to. I mixed a couple bottles with it to give it a fair shot and ended up throwing it away. That's just me though, I know some folks prefer it over V1. Best answer, buy a small bottle and give it a try.

I don't think difference in "quality" is what you really meant to ask (CAP "quality" is uniformly good). Rather, I think(?) you are asking do the V2s taste "as good" as the V1 versions.

That is a tough one because taste is so subjective. Do they taste "the same?" The short answer is no. The V2 versions are reformulated to remove Acetoin and Acetyl Propionyl (A/AP). Because they are not made the same; they can't taste the same (IMO). A/AP can add richness, buttery, and creamy notes, to a concentrate. They can also add a thicker mouthfeel.

It is like subbing flavor "A" for flavor "B" in a recipe. One of the most common questions I read in recipe threads is: "I don't have blank flavor; can I substitute blank flavor instead?" Of course you can; but it is going to taste different. How different depends on how different the original is from what is being subbed. As well as the individual's ability to taste the difference.

This holds true (to me; at least) with CAPs V1s vs. the V2s. The handful I have compared do taste different. I would not describe them as "better" or "worse"; just "different." Therefore, when I sub V2s for V1s in my recipes, the result tastes different. Whether any given individual is going to like it less or more depends solely on that person's own palate.

I know some mixers are concerned with their own safety and will not use V1s "period." Others aren't worried about it and use only V1s. Still others will do side-by-side comparisons, and choose on a recipe-by-recipe basis.

If you are really curious; buy small samples and try them side-by-side, then decide for yourself. Only your taste buds can tell you what tastes good to you.

The advice above is excellent. I usually start as small as I can with flavors, as even kind of "knowing my wheelhouse" by now, well every flavor is slightly different. Hearing about them can be useful but there is no substitute for real world experience.... I can usually determine flavors I know I will dislike (by now) but until I actually taste something, it's hard to say "X is better than Y" to me. Best of luck.
