I found the nautilus' flavor to be superior to the subtank. It's just design. My kayfun v4 has even better flavor, as does my taifun. The subtank tasted muted to me when comparing it to an Atlantis.

I have the same exact setup you have. Istick30 with the Kanger mini sub.

I think there actually is a breaking in period. I was disappointed with the flavor and clouds right out of the box after a good 30 minute coil prime.
But after about 2 days of use it started to get awesome.

Huge clouds at 18 watts on the 1.2 and really huge clouds at 27 watts using the sub ohm coil. Great flavor too. It's almost ridiculous the amount of vapor that it's capable of producing. Super Doppler radar picked up on a few of the clouds and reported it as a weather front moving in over Florida!

You can easily crank it up to 30 watts on the .5, and says 25 watts on the 1.2.
As far as what you will vape at, depends a lot on the juice and flavor coming out.

Break in period for sure, I hated the Subtank for the first day, tasted foul, yet it vaped like a beast so I cut it some slack. Now I'm glad I did, factory machine oil taste has gone completely and the taste is barely different from the Nautilus, although the Nautilus does have outstanding taste so it is expected. I vape at 25w on the .5 coil, and I'll push it to 30w if I feel like annoying my mother.
You'll also find further sweet spots, such as juice ratios, and nicotine content- which I recommend cutting in half if going from the Nauty to the Sub!
Experiment, and you'll find what your looking for!

I don't like burnt hits, and I like my coils to last as long as possible, so I tend to use the OCC coils at about the halfway point of their rating..1.2 is rated 12-25 watts and the .5 @ 15-30 watts

I use the sub mini with a Sigelei Mini (which is basically the same mod made by a different co). I have a 0.5 coil at 15W right now. Kinda waiting to spend the coil (I'm frugal) so that I can put a 1.2 in and run it at 13.5W. It's all personal preference though, but by all means, start low and work up. Also stay within the manufacturers recommended limits.
