You are on the right track. I note some other things like type of atty used and voltage, or what sort of flavor went before what I am testing, because I don't always clean super well or use a fresh atty.

I don't do a lot of waiting or pre-steeping and I test things with nic included (most don't suggest this). If you have Microsoft Office, check out One Note for tracking your mixes, or there are various open-source alternatives.

Start to expand your vocabulary of taste descriptors. "Pretty good" or "way too strong" or "kinda fruity" really isn't helpful when you look back at notes. Some art instructor years ago harping about people saying "that's interesting" sticks in my head. Really you should try to remove entirely whether you like something or not and concentrate on what the flavor is.
