Thicker guage ~ lower resistance per mm or wire - So you can build lower total resistance, or the same resistance with more wraps and therefore more surface area. Slower heat up/down down times.

Thinner guage ~ higher resistance per mm of wire - Faster heat up/down times.
What is better? Slower or faster heating and cooling

And what's a good resistance for dripping? Can you drop with that same gauge and resistance? Is this all a matter of preference?
Most of it is preference while some of it is based on what device you're using. If you use a regulated variable wattage/voltage mod then you can build as low or as high as you want within reason. But for a mechanical you build specifically to what you like, also within reason. The difference is that its easier to fine tune your vape with a regulated mod.

I use 26g for just about every rba I use. Its very easy to work with and has a good ramp up/cool down time. I like around .3 ohms on my mechs and I can make almost any resistance work on my sigelei.

Cool. I think im going to take the first build or two mastering the basic single coil build (im sure ill get it down my first or second try as it looks very simple). Then ill get into some of these fancy pants coil builds :p
