Well, you could do that...or you could twist up that 30GA with a drill and basically get something pretty close to 28GA. And you'll be in kanthal heaven, to boot! I have 28GA, though, for certain types of coils. Some of it does depend on what you're building (e.g. twisted kanthal isn't good for nano coils), but I really enjoy working with twisted and use it most of the time.
