No worries, Glam. I think you'd be happy with either of those two innokin offerings, and the options are really minimal in terms of your understanding. Just pick: box style or stick style and then go fer it! They both will adjust the same way as your Cool Fire.
I'm still rooting for the V3 because of it's smaller form factor and lighter weight. The MVP is a battery powerhouse and rarely needs to be charged, but you'll pay for that in weight.

youve got a knack for making your devices come alive! your personalization is killer. do you do that with any of your other possessions? for example, my TV remote is so boring looking, but i bet yours is dazzling! but anyhoozer.. Glam- the itaste v3 sounds perfect for you. go to 101 vape they have the best price on one by a mile. and my guess is that youll have no problems with the settings- its a set it and forget it type of device. set your watts and boom: done. same as your (RIP) coolfire. trust me, my fiancee is not vaporlogically inclined - not in the slightest - and she wields that puppy with zero problems.
