It is supposed to reduce tartness in flavor.

It might do a little more, said to Reduce the acid perception without modifying the pH. Use to use it years ago when we had a few flavor blenders and not much choice of flavors. Had to live with whats offered. I made a few tobacco recipes with tobacco Absolute that MMask helped. I'm acid adverse so thanks for reminding me, might use it as a DIY after mix (add a drop or two to a mix) fix. I have to avoid most fruit recipes but I would like a cherry on top from time to time.
