Banana Pecan Dog Cake


Ingredients:

2/3 cup bananas, mashed
1/2 cup butter, softened (can be substituted with 1/4 c + 2 Tbs olive oil)
3/4 cup water
3 large eggs
2 cups whole wheat flour
2 tsp baking powder
1 tsp baking soda
1 tsp dried ginger
2 tsp. cinnamon
1/2 cup pecans, chopped

Instructions:

Preheat oven to 350° F
Whisk flour, baking powder, baking soda, ginger and cinnamon together in a medium bowl. Set aside.
Beat together the bananas and butter until creamy.
Beat in water and eggs one at a time.
Stir dry ingredients into the banana mixture.
Stir in pecans.
Spoon batter evenly into a prepared bundt pan.
Bake for 35 minutes.
Cool on wire rack for 5 minutes.
Remove from pan and let cool completely on a wire rack.

Can use a mix of plain yogurt and honey as a glaze

Can be made into muffins with reduced cooking time. As ovens vary I'd make 1st check with a toothpick at about 8-10 min.

This is a made up snack.........great for Christmas Eve & New Years Eve.....
1 Package Of Won Tons skins
Cooked seasoned Ground Beef/any kind of cooked meat (even seafood without the cheese)
Grated cheese

Brush oil on one side of the won ton skins. Center each skin, oiled side down, over a mini-cupcake or muffin cup (1 1/4 inches wide at the bottom). Use the fingers of one hand to pick up the four edges of the square and the index finger of your other hand to press the skin into the cup, pleating and smoothing out the sides.

Lightly fill each won ton cup with about 1 tablespoon of the meat & top with cheese.
Bake in a 350-degree oven for 6 to 8 minutes, until the edges are barely golden or starting to brown.

Remove from the oven and let cool for 5 minutes. Lift from the pan and set on a parchment paper or foil-lined baking sheet. Each should hold its shape nicely.
This initial baking may be done a day ahead and reheated when needed

Peanut Butter Banana Bread

1 1/2 cups mashed ripe bananas, about 4 bananas
1/3 cup plain yogurt or buttermilk
1/3 cup crunchy peanut butter
3 tablespoons butter, melted
2 large eggs
¾ cup brown sugar
1 teaspoon vanilla extract
½ cup of raisins
1 ½ cups whole wheat pastry flour
1/4 cup ground flaxseed meal
3/4 teaspoon baking soda
1/2 teaspoon salt


Place a rack in the center of the oven and preheat to 350 degrees. Grease and flour a 9×5-inch loaf pan.

In a large bowl, whisk together flour, flaxseed meal, baking soda, and salt.

In a medium bowl, whisk together mashed bananas, yogurt or buttermilk, peanut butter and melted butter. Whisk in eggs, sugar, vanilla and raisins.

Pour the wet mixture into the dry ingredients. Fold together with a spatula until just combined. Pour the batter into the prepared baking pan. Bake for 55 to 65 minutes, or until a skewer inserted into the center of the loaf comes out clean.

Remove from the oven and allow to cool in the pan for 20 minutes before inverting the bread onto a wire rack to cool completely.
This bread lasts, well-wrapped at room temperature, for up to 4 days. It is also great to store, well wrapped, in the freezer.

This slightly-sweet and savory banana bread can be a treat all on its own. Or, smear a toasted slice with a thin layer of peanut butter and you’ve got a delicious, fiber- and protein-packed breakfast with a sweet edge.

Makes one 9×5 inch loaf

Blood Orange Gin Sparkler

You can keep the rosemary simple syrup in the refrigerator for a week or so. You can do this ahead of time. Also, if blood oranges are hard for you to come by - navel oranges are also delicious.

2 cups / 480 ml water
1 cup / 6.5 oz / 185 g sugar
4 tablespoons (~2 sprigs-worth) fresh rosemary leaves
1 bay leaf (optional)

blood oranges
gin
ice cubes
tonic water (or sparkling water)

Combine the water, sugar, rosemary, and bay in a small saucepan over medium heat. Bring to a simmer for 3-5 minutes, or long enough for the sugar to dissolve, stirring occasionally. Remove from the heat and let infuse for 10 minutes. Strain into a jar to cool completely.

In the meantime, juice and strain your oranges, you'll need 3 tablespoons / 1.5 ounces of juice for each drink.

To make each drink you're going to combine equal parts gin, juice, and tonic water with a bit of syrup and ice. So, its 3 tablespoons / 1 1/2 oz gin, 3 tablespoons / 1 1/2 oz freshly squeezed blood orange juice, and 1-2 teaspoons of the rosemary syrup in each tall glass (I used kolsch glasses here). Stir to combine, fill each glass 2/3 full with ice and top off with 3 tablespoons / 1 1/2 oz tonic water. Stir again and you're set.

Prep time: 5 min - Cook time: 10 min

Cows Out to Pasture

½ cup peanut butter
16 graham cracker squares
½ cup marshmallow cream
½ cup shredded coconut, tinted green
24 large marshmallows (3 marshmallows per cow)
24 straight pretzel sticks
Tube of black icing

Instructions for the cows:

Take three pretzel sticks, break each in half.

Screw four pretzel stick halves into the bottom of two marshmallows to form the body.

Use one pretzel stick half to connect the two marshmallows that form the body, and the one pretzel stick half as the tail.

Take the third marshmallow and slice it into three pieces. Connect two pieces on the sticky sides to form the head. Break the last piece into two, and stick on the top of the head to form the ears. Use black icing to add ears and nose.

Instructions for the pasture:

Take a graham cracker square and spread peanut butter on it, then put another graham cracker square on top of it.

Smear the top of the graham cracker with marshmallow cream and sprinkle with coconut.

For the grass, place coconut and several drops of green food coloring into a plastic bag and shake.

Place your cow on top of the graham cracker. It can be sitting, standing or eating, depending on how you place the pretzel sticks.

Serves 8

Christmas Morning Breakfast Strata


Ingredients
1 pound ground breakfast sausage (i used chicken apple sausage)
1 red bell pepper
2 cups mushrooms, sliced (i like to use cremini or white)
2 teaspoonss salt, divided
pepper to taste
1 loaf italian bread, ciabatta or baguette (crusty bread), cut into 1 inch cubes (about 8 cups of bread) *also a great way to use up day old bread
1 1/2 dozen large eggs (18)
1 cup whole milk
salt
1 1/2 cups cheddar cheese, shredded
butter for baking the dish


Preparation
1. Cook the sausage in a saute pan over medium heat for 3 minutes, breaking it into bite size pieces. Add the mushrooms, bell peppers, 1 tsp of salt and pepper. Continue to cook for 5 minutes. Let cool.
2. Preheat oven to 375 degrees for
3. In a bowl, beat the eggs, 1 tsp salt and milk. Add the cheese and stir to combine.
4. Butter the 13×9 inch baking dish and add the bread cubes and cooled sausage mixture. Toss to combine.
5. Pour the egg mixture over the bread and sausage, pressing the bread mixture down gently to soak up some of the egg mixture.
6. Cover the dish with foil and bake for 30 minutes.
7. Uncover the dish and continue to bake an additional 20 minutes.
8. Serve.

Ingredients

box Betty Crocker® SuperMoist® yellow cake mix

Water, vegetable oil and eggs called for on cake mix box

containers Betty Crocker® Rich & Creamy chocolate frosting

1/2
container Betty Crocker® Whipped vanilla frosting

tube (0.68 oz) Betty Crocker® brown decorating gel

brown candy-coated chocolate candies



Heat oven to 350°F (325°F for dark or nonstick pans). Grease bottoms and sides of 2 (8-inch) round cake pans with shortening or cooking spray. Place paper baking cup in each of 2 regular-size muffin cups.
2 Make cake mix as directed on box, using water, oil and eggs. Fill 2 muffin cups about two-thirds full of batter. Divide remaining batter between cake pans. Bake as directed on box for 8-inch rounds and cupcakes. Cool 10 minutes; remove from pans to cooling racks. Cool completely, about 1 hour.
3 For easier handling, refrigerate or freeze cake 30 minutes to 1 hour or until firm.
4 On serving plate, place 1 cake layer, rounded side down. Spread with 1 cup of the chocolate frosting. Top with second cake layer, rounded side up. Remove paper liners from cupcakes; trim rounded top off of each cupcake. Place cupcakes at top of cake for ears. Spread thin layer of chocolate frosting over cake and cupcakes to seal in crumbs. Refrigerate or freeze 30 minutes to 1 hour.
5 In small bowl, place vanilla frosting. Tint with chocolate frosting adding 1/2 teaspoon at a time until desired color is reached for monkey face. Spread frosting in kidney shape in center of cake for monkey face. Spread frosting in center of cupcakes for inner ears. Spoon remaining chocolate frosting into decorating bag fitted with grass icing tip (#233 or #133); pipe “fur” on side of cake, on top of cake around face and on cupcakes. With decorating gel, draw mouth, nose and line in inner ears. Add candies for eyes.

Trust me....I taste each cookie I make for these guys.....definitely would need sugar for our own consumption :laugh:
