What you need is a hydrometer. You wait for the specific gravity to stabilize before you rack.
I graduated in 1973, but I'll happily accept the title of Old Fart. Better than a fresh one still running people off.

I graduated college in 1975. Most of the time, working with youngsters was never a problem but, for a while, I worked with someone who was born in May 1975 -- the same month I got my diploma. Younger would have been fine, but that was... just get me a cane.

I do have a hydrometer and used for the alcohol % on the first batch.
So I just check it every couple days till it stabilizes, sounds easy enough.

I'd start checking after a week, then check every 2-3 days after that. When you get three readings the same (and at or near the expected final gravity) then you should be ready to rack and clarify.
