Any particular reason to bbq at 2am other then not wanting to sleep?
Being a family guy I am really only used to doing it in the middle of the afternoon lol Also since my wife is a better cook than I am I usually just get the grill going and ready then let her do the actual cooking

Do you soak it in water or anything first? Back when my dad smoked fish he would always soak the wood beforehand so it wouldn't actually burn up (I think)...
You just throw it on top of the coals?
I did the water thing until I bought a book about it said don't do that, but keep in mind I'm not using chips I use split logs about 4 inches long in the Webber and a foot long in my big smoker
