So are there any other Spam people here? I don't like fried Spam but I like it other ways. Spam Potato Soup, Spam and Scalloped potatoes, Spam omelette etc. But my favorite comfort food is Spam and Cheese Toasties and Tomato Soup.
Shredded Spam, Shredded Cheese, and diced onion with just enough mayo to hold it together, salt & pepper to taste. Butter bread and lay the buttered side down on a cookie sheet, then spread the Spam mixture on top and bake it till the bottom is golden brown and the top is melty.

Sounds really good cooked up that way. I am going to have to try it. I do like fried spam. Cut it into about 1/4" slices. I dip it in flour with salt and pepper mixed in and then in a milk/egg mixture. Back in the flour again and then back in the milk/egg mixture. One more time in the flour and then fried. Yummy. 'Specially when eaten wrapped up in a slice of buttered bread.
