I am using the V2 cig with disposable cartridges, is this a good brand to use?
Can I refill the disposable cartridges and can I order the liquid and what I need to do this from V2?

How many batteries should I have on hand, I currently have the 2 from the starter kit, one is manual the other automatic.

My tongue feels kind of sore off and on since I started vaping 4 weeks ago, but I'm off analog cigs, hoping to stay off them. Canvaping cause a sore tongue?

There are many better brands than the V2 which is a small battery model. Cartridges can typically be cleaned and refilled. Although most of us don't use cartridges but either drip directly onto the atomizer coil or use cartomizers which are atomizers with built in carts.

For around $40 you can get a much better model that will hold a charge for about 5 hours and provide warmer vapor. Most of us use only manual batteries as they provide better control and are safer. You can also get blank cartomizers or carts and buy your liquid separately like most of us do and refill them your self.

I would look at the E-Power 510 as a good "beginner" model.

There are less expensive KR808D-1 models (Vapor4Life, SmokelessImage, Bloogplanet, Halocigs g6, and others).

So V2 is a fine model but a ripoff price for parts.

I don't know if V2 cartos are decent for refilling or not nor whether they use any slimey rebrander tricks like using glued end caps. Good cartos like those Bloogplanet ones can be refilled many times with suitable juice. Re sore tongue - try lower nicotine and/or put a plastic or delrin drip tip (from LiteCigUSA.net) on the carto instead of the end cap (do NOT drip into it, but it will bring the vapor into your mouth in a wider less concentrated stream and should cause less nicotine irritation). And drink plenty of fluids.
