I've enjoyed my Henckel more than my Wusthof's, but honestly reach for my cheap Dexter Russell when I have some serious chopping to do. And a Victorinox for deboning & filleting.

You do some serious knife use I am sure! I am curious about the Dexter Russell....what sets it apart for you??

The beauty of life, what some think top of the line is important to them others don't. I could care less what truck I have as long as it gets me to work and my boat to the lake without breaking down I am good. I currently drive an early 2000 model yukon, had it almost 7 years has 225k on it and has never been washed (I hate washing cars but do like the cab clean).
On the other hand what you could probably not care about but means a great deal to me is what I just purchased today:

This baby and I are gonna be busy this spring making deer jerky and all sumer long drying everything we possibly can from the garden and our fruit trees!

You did this before, Loren. Can't remember what the subject was that time but it was a killer thread that drew adimiration from far and wide as this one does again.

I bought an Excalibur last fall off of craiglist. It a 5 tray model and not the top of the line but its great. I paid $80 for it and it was mint. I dried garlic, tomatoes, onions, carrots and made some jerky too. I also played around with applesauce and got some nice rollups with that. Its just a nice machine and its USA made. I've used it to proof bread dough too.
Heres a tray of carrots ready to go in. I fit around 8 or 9 pounds of carrots in a 1 quart bag. :)

That other thread was about remembering when...stuff like telephones with rotary dials, high beams on the floor..ole timer stuff...lol. Good to see you Roger.

Thanks, I got a handle on it now, Loren. Whew, some days it doesn't even seem worthwhile to gnaw through the leather straps.

I think it is just because I used one for hundreds of pounds worth of chopping before I could splurge on the fancier knives. Sturdy blade, holds its edge, grippy handle, economical and I don't cry when one gets stolen.

If someone came into my home, I think the last thing they would TRY to steal is one of my knives LOL they would also get a lesson in metals, namely lead! I will have to check out the Dexters sounds like a good one, my MIL is hard on knives so sounds like a good gift :D

:lol: Never had one stolen from my home....work is another story!

They are great for folks that are rough on blades. I caught a couple of employees sharpening blades outside on parking lot curbs. :facepalm: I couldn't believe my eyes the first time I saw it, and about passed out the second time it happened. So much for cleanliness and sanitation!
