I'm going to attempt a gingerbread cookie with powdered sugar icing recipe, but I have no idea how to concoct powdered sugar icing. Anyone have ideas or experiences with this?
Not sure there would be any flavor notes from the icing that are not already part of gingerbread. The main flavors from the icing would be sugar, vanilla and maybe just a hint of butter and those sorts of flavors should already be part of the gingerbread. I'm not sure how you would make them "stick out" as it were.

By adding EM or sweetner with a butter or cream would only tend to effect the sweetness, creaminess of the gingerbread. So I think the only thing you can do here is have a gingerbread flavor with a top note of lets say vanilla/sweetner.
