At the moment I build my coil on a small screwdriver that I got when I purchased a kayfun clone and it's working well.
But I was wondering, of I build the coil on something smaller, like a smaller drill bit, with the same amount of wraps, it's the final build will be lower in ohms?

yes, all else equal then a smaller diameter will be less wire length so less resistance, although not by much in small increments

If I want to go lower a bit could I just use the same small screwdriver and do a wrap less, I mean is that a good way to do it?

Yes, most people adjust the number of wraps to get the desired ohms rather than adjust coil diameter. Mind safety precautions about battery safety and current, tho.

resistance wire has a given resistance for the length of wire.
There arent real numbers but just for demonstration purposes:
Wire X has a resistance of 2 ohms at 1 foot.
less wraps or smaller coil results in less wire so a lower resistance.
more wraps or larger coil results in more wire so higher resistance (provided there are not shorts).
