I checked out the first and third video and I feel like it's a lot less complicated than I thought. The only thing that still confuses me is building coils. I don't understand how to build the coil resistance to what is safe and produces the most vapor and flavor while staying in battery limits. I understand not to go over the amp limit of your battery, that makes sense now, but I don't understand what would be a proper resistance.
The two most important things to know is the amp limit (max continuous discharge rate) of your battery and thereby knowing what is the lowest resistance (ohm) you can build for that battery. Using an Ohm's Law calculator can show you that.

1.0 ohm = 4.2 amp draw from battery
0.9 ohm = 4.6 amp draw
0.8 ohm = 5.2 amp draw
0.7 ohms = 6 amp draw
0.6 ohms = 7 amp draw
0.5 ohms = 8.4 amp draw
0.4 ohms = 10.5 amp draw
0.3 ohms = 14.0 amp draw
0.2 ohms = 21.0 amp draw
0.1 ohms = 42.0 amp draw
0.0 ohms = dead short = battery goes into thermal runaway

The blog Battery Basics to Mods has a list of recommended batteries and their amp limits.

Innitially, plan to build a simple 1.0 ohm coil. Depending upon the gauge wire you use and the diameter of the coil, use a Coil Building Guide, plug in all the info, and you'll know the number of loops to build your coil to. (28 gauge Kanthal wire is a good starting place)

even after following the guide, you still need to check your builds with an ohm-meter!!!

if your going to get-into Mec's there are certain tools you need in your vape-box.

an ohm-meter.
a DMM (digital multi-meter) or an inline voltmeter, or both.
a decent small precision screwdriver set.
a good cleaning compound such as "Nevr-Dull" wadding polish which can be found at Wal-mart and some 91% ISO and some polishing rags or cloth & a tooth-brush...you must keep your device/contacts/switch/threads/atty-pin clean, this is a must for Mec's.

You have to do the reading :). Its important for your safety, and the safety of others around you.

Mech mods can be great. I have a slew of them myself, but they require an understanding of what you're doing. Take the time to learn first, and if it still interests you, get it. I'm a bored mathematician who is addicted to building, so I enjoy them, but they aren't for everyone. I do think most vapers should be educated in their use and care in case regulations take our other options from us, but its not something you just buy and use without the knowledge. No rule says you need to learn it all today :). If you're worried the one you won't be available later when you're ready, you could buy it and put it away until you're ready.

What I mean is, how would I know what gauge wire, what diameter and how many wraps to get a 0.5 coil?

Try Steam Engine. I started out building ~1.5 ohm coils with 28g. Now, depending on the mod I use, I generally build with 24g. Play around with the numbers first, though. Read through Baditude's blogs. Watch some videos. Talk to someone at your vape shop. When you're ready, build on your device attached to an ohm meter. You can trash coil after coil if you want until you think you get it right. Remember: Kanthal is Cheap...Fingers aren't.

The only 2cents I can add here is with you wanting to jump into mechs so quick , but a guys mod. They have tips and bottoms depending on the tube type you want. The owner is on ECF. He is extremly helpful and patient. I know because I've had mine a month or so. It's very well built and he stands behind his work. To give you an idea of close tolerance. I couldn't find out where to twist of the RDA top cap. I ordered the Lord combo which they don't have anymore in 14650. I love mine and think it's the best money I've spent in vaping. More so than my 100 watt siegeli

I think the thing the vape shop guy was referring to, was that tanks aren't safe to use on a HYBRID top mod. I have some personal experience with this, and believe me, they aren't.
I used my Atlantis tanks on mechs for months, and they worked great.
...and all the above advice is spot on. I researched mechs for about a year before I bought one...blogs, threads, vids...
I did what the experts said to do, I buy from reputable vendors, and I still seek counsel if I have questions or issues.
I've treated building the same way...slowly, slowly
