I've built this exact same way and never gotten the burnt rubber taste from my grommets, so there must be something else going on. When you dry burn your coil after it is installed, you shouldn't do it for longer than a second or a bit more. Eventually the legs will get hot enough to burn the grommet if you keep the coil red for too long. Also, dry burn at the lowest possible voltage to give yourself more of a buffer. Consider torching the wick and coil prior to installing it, so less dry burning is needed. Finally, the highest voltage you should be using with a 2 ohm build is about 4 volts. Any higher and the burning risk increases substantially.
