So I need to start cooking more variety...especially now that I'm not smoking and can taste again :)

I hope no one minds that I'm starting a thread...share your favorite recipes...

I really hated meatloaf as a kid, but found this recipe and now love meatloaf....

Boston Market Meatloaf Recipe


  • 1 cup tomato sauce
  • 1 1/2 tablespoons kraft barbecue sauce
  • 1 tablespoon sugar (I use equal in place of sugar)[/FONT]
  • 1 1/2 lbs lean ground sirloin (I use ground turkey)
  • 6 tablespoons all-purpose flour
  • 3/4 teaspoon salt
  • 1/2 teaspoon onion powder
  • 1/4 teaspoon ground black pepper
  • 1 dash garlic powder
Instructions:
  1. Preheat oven to 400°F.
  2. In a small saucepan, make the sauce by combining the tomato sauce, barbecue sauce and sugar over medium heat.
  3. Bring to a boil, stirring often. Remove it from the heat.
  4. In a large bowl, add all but 2 tablespoons of the tomato sauce to the meat.
  5. Using your clean hands work the sauce into the meat.
  6. Work in the remaining ingredients, spice and then the flour.
  7. Load the meat into a loaf pan.
  8. Wrap foil over the pan and place it into the oven for 30 minutes.
  9. Take the meatloaf from the oven, remove the foil and drain the fat.
  10. Using a knife, slice the meatloaf all the way through into 8 slices while it is still in the pan.
  11. Pour the remaining 2 tablespoons of sauce over the top of the meatloaf. Don't spread.
  12. Place the meatloaf back into the oven, uncovered, cook for 25-30 minutes or until it is done.
  13. Cool for 5 minutes before taking out of the pan.

You can also put this into cupcake cups in a cupcake pan and make singles. I tend to do this because I cook for one and the unused ones can be popped in the freezer for another day.

I rarely cook anything. And I wouldn't exactly call this cooking, but here's a quick-n-dirty, (and cheap), noodle dish that I'll occasionally make for a Saturday lunch for my kids.

Start to finish, this should take you about 15 minutes, tops. Which is nice...

What you'll need:
  • 1 decent-sized head of fresh broccoli
  • 3 packs of Ramen noodles
  • Almonds
  • Ponzu sauce (ideally), or soy sauce

What to do:
  1. Smash up a handful of almonds into small-ish pieces.
  2. Get your water boiling for the Ramen noodles.
  3. Chop the tops off of the head of broccoli and rinse them.
  4. Open up the Ramen packages and throw away the seasoning packets, (which contain powdered evil).
  5. Steam the broccoli in about a ½" of water for about 7 minutes (softens them, but keeps `em crunchy).
  6. Break the noodle bunches in half, and drop them into boiling water for 3 minutes.
  7. Strain the noodles.
  8. Strain the broccoli.
  9. Mix them together and sprinkle the almond bits on top.
  10. Plate the mixture.
  11. Add ponzu sauce or soy sauce to taste.

Makes 2 medium kid-sized servings, with a little extra left over for dad. :)

Great Idea, and that meatloaf sounds wonderful! I've made that top ramen dish myself. Yummy/Easy!
Here's my family's favorite. Everyone makes it slightly different by adding hot sauce and
misc. meats & beans;
Calico Beans;
Bacon about 10 to 12 slices (Or a LB of bacon pieces that are cheap at the meat counter)
1 pound lean ground beef
1 medium sized chopped onion
3/4 cup brown sugar
1 tablespoon dry mustard
2 cans pork and beans UNdrained (16 or 20 oz cans)
1 can lima beans or butter beans, drained
1 can kidney beans, drained
1/2 cup ketchup
1 tsp. salt
1 tbsp. vinegar


Brown bacon, ground beef, and chopped onions. Combine drained ground beef mixture in slow cooker with remaining ingredients; cover and cook on LOW for 3 to 5 hours.

OR - you can bake it in a casserole dish at 350 for an hour.

I’ve made this recipe a few times in the past month; it’s so good!

Spinach Fettuccini

Approx. 10 oz. bag fresh baby spinach
6 T. butter
1/2 c. heavy cream
3/ 4 c. fresh grated parmesan cheese
1 8 oz. package fettuccini or spinach fettuccini (I like Debohl’s brand)
1 clove garlic (I substitute crushed garlic that comes in a jar)

Cut up spinach into small pieces
Start boiling water for pasta
Once the pasta is boiling, sauté the spinach with garlic in butter.
After the pasta is done, drain and then stir in the spinach/garlic, heavy cream, and parmesan. Mix well, and add quite a bit of black pepper.

I love to cook, here a family fav:
Tricolor Orzo

1 pound orzo pasta (barilla is best)
1/4 cup extra-virgin olive oil, plus some drizzling
1 red bell pepper, chopped
1 yellow bell pepper, chopped
1 orange bell pepper, chopped (or green)
2 cups fresh spinach, chopped
3/4 cup mozarella cheese, shredded
1/4-1/2 cup sun dried tomatoes, chopped (prefer dried vs jar in oil)*
12 fresh basil leaves, chopped
1/2 cup toasted pine nutes or walnuts
1/8 teaspoon lemon juice or less (few drops?)
1 1/2 teaspoon salt* see below
1 teaspoon freshly ground black pepper *see below

Bring a large pot of salted water to a boil over high heat. Add the pasta and cook until tender but still firm to the bite, stirring ocasionally, about 8-10 minutes. Drain the pasta and put on a large cookie sheet. Drizzle pasta with olive oil, toss, spread out to cool. Once it's cool enough, transfer to a large serving bowl. Add the remaining ingredients and toss gently to combine. *Salt and pepper to taste, as taste is subjective and serve. Sun dried tomatoes, use what you have available. If jar is what you have, chop and taste to estimate how much you care for.
yield approx 6-8 servings
cook time- 10 minutes
prep time- 20 minutes

This is where you can play with it...you can add any combination of bell peppers you like, add roasted corn kernels (or can-remember to drain), cooked chicken (chopped). Makes a great spring/summer salad to eat as a side dish, or with chicken, more of a meal. Garlic wouldn't hurt it either (pressed garlic, powder, whatever you have on hand).

Creamy White Chili - won 1st place in Kansas City Chili Cookoff

1lb boneless skinless chicken breasts cut into 1/2in cubes
1 medium onion chopped
1 1/2 tablespoon garlic powder (or more if you like garlic)
1 tablespoon vegetable oil
2 cans (15oz) great northern beans, drained and rinsed
1 can (14.5oz) chicken broth
2 cans (4oz) chopped green chilis (adjust to your heat preference)
1 teaspoon salt (I only use a pinch)
1 teaspoon ground cumin
1/4 teaspoon cayenne pepper (adjust to your heat preference)
1 cup (8oz) sour cream
1/2 cup heavy whipping cream

In a larger saucepan, saute chicken, onion, and garlic powder in oil until chicken is done. Drain off grease/fat and pour into a stock pot. Add beans, broth, chilies, and seasonings. Bring to a boil. Reduce heat and simmer uncovered for 30 minutes. Remove from heat, stir in sour cream and heavy whipping cream. Serve immediately. 7 servings.

This is one of my favorite EASY crockpot recipes.....I don't make it as much because it is just me...

CROCKPOT CHEESY CHICKEN

6 chicken breasts (boneless & skinless)
salt & pepper to taste
garlic powder, to taste
2 cans cream of chicken soup
1 can cheddar cheese soup

Rinse chicken and sprinkle with salt, pepper and garlic powder. Mix undiluted soup and pour over chicken in the crock pot. Cook on LOW 6 to 8 hours. Serve over rice or noodles.
I also sometimes add real shredded cheese to the mix toward the end.

Having Vegan guests over for a visit? This is a yummy cake to serve. You can use Rice flour to make it gluten free also. I could not tell it was egg & butter free the first time I tasted it.
Vegan Chocolate CakeIngredients
1 1/2 cups all-purpose flour
1 cup white sugar
1/4 cup cocoa powder
1 teaspoon baking soda
1/2 teaspoon salt
1/3 cup vegetable oil
1 teaspoon vanilla extract
1 teaspoon distilled white vinegar
1 cup water
Directions
Preheat oven to 350 degrees F (175 degrees C).
Lightly grease one 8x8 inch cake pan.
Mix together the flour, sugar, cocoa, baking soda and salt. Add the oil, vanilla, vinegar and water. Mix together until smooth.
Pour into prepared pan and bake at 350 degrees F (175 degrees C) for 45 minutes. Remove from oven and allow to cool.

For frosting;
1 or 2 ripe banana(s)
1 teaspoon lemon juice (keeps it from turning brown)
1 cup of powdered sugar.
1/8 teas salt
1/2 teas vanilla extract.

Mash banana to make about 1/2 cup.Mix all ingredients until smooth. Add more sugar to thicken, or a little water to thin.

**I actually stumbled across this recipe when I had a hankering for cake but was too lazy to go to the store & buy eggs...but my vegan buddies really liked it!

Awesome :) I tend to be one of those picky eaters too...although now that I'm not smoking I'm trying to eat better and maybe a little healthier...we'll see how that goes...

Hey Maureen, I made your CROCKPOT CHEESY CHICKEN today! It was very very yummy. Even my picky eater hubby loved it. Thank you for sharing!

Angel hair pasta w/ fresh tomatoes and basil

This recipe is quick and easy!

1 box angel hair pasta (I recommend DeBoles)
3 ripe large tomatoes
2 T. extra virgin olive oil
1 lemon
approximately 1/4 c. dry white wine
1 clove minced garlic
tiny bit salt (I use sea salt)
black pepper
fresh basil chopped fine
fresh grated parmesan cheese.

Start boiling water for the pasta. Chop up tomatoes into small pieces. After the pasta is cooking, heat tomatoes on low heat. Add olive oil, juice from lemon, white wine, garlic, salt and a little bit of black pepper.

After pasta is done, serve with the tomato mixture, basil, and parmesan.
