Low resistance = hot vapor, generally more vapor production, and less of a flavor

Standard = warm vapor, mild vapor production, good flavor

High = warm vapor, mild vapor production, great flavor

I've only had LR and standard, but I also don't have a badass variable voltage mod to "play" with the resistances so I'm not speaking from experience.

You need to match your resistance to the voltage you are using. Resistance and voltage work together to create Watts, which is what ultimately determines what sort of heat, vapor, etc. is produced. Ohms Law. Volts*Volts/Ohms =Watts

You can obtain the same Wattage from a 1.8 ohm coil that you can from a 2.4 ohm coil by adjusting voltage. The only real difference I can see from using a low resistance (ohms) coil is that it heats up fast as you take a drag so it seems that the vapor is hotter. A high resistance coil will heat up slower (at the same Wattage).
