Tex-Mex Baked Spaghetti Squash
Ingredients
Directions
- 1 (3-ounce) cooked Chicken Breast, cut into chunks
- 1 medium Spaghetti Squash (about 4 cups cooked)
- 1 tablespoon Olive Oil
- 1 cup Kidney Beans, drained and rinsed
- 1 cup fresh Salsa
- 3 tablespoons fresh Coriander, chopped
- 1/2 cup Shredded Cheddar Cheese
- Sea salt & Pepper
- 1 tablespoon Chili Flakes, optional
Preheat your oven to 425°F and line your baking sheet with parchment.
Cut the squash in half, rub with inside with olive oil and sprinkle sea salt & pepper. Place face down on the baking sheet & bake for about 25-30 minutes. The edges on the inside should be a bit browned and shreds should form easily with a fork.
Meanwhile, toss the chili flakes with the cheeses and stir the fresh coriander into the salsa.
When the squash is ready, take it out and let it stand for 5 minutes. Turn the oven to the broiler setting. Fully shred the squash, leaving the shell intact. You will be stuffing it!
Transfer the spaghetti squash to a mixing bowl. Stir in the salsa, followed by the beans and chicken. Split the mixture in half and stuff each squash shell. Top with the shredded cheese.
Place them back on the same baking sheet & broil until bubbly and browned. About 3-4 minutes.

You are absolutely right. This is a learning experience for the suppliers. Hopefully each contest will get easier and better as they learn the ropes. I am actually in school right now (working toward my Bachelor's) learning to do this stuff. It's a fascinating area of marketing but it is still pretty new.@Robino1 . . . SO - Given that I never got a reply to "My" post here in this thread from anyone in charge/running the contest - nor any of the the PM/Conversations I sent (NOT NICE ! ! !), I finally contacted "Support @ Smoketech" Directly with the personal information that was requested in Becca's earlier post . . . Which finally resulted in an Email Reply 24 hours later and after going back and forth for a couple of days . . . End result - I was able to learn eventually and confirm that I was not that "Person" on the list of Winners who won . . .

YES - As "You" Stated, it seems that WInner's are being confirmed based on the email address that was registered when entering contest and who they sent emails out to as being an actual Winner . . . At least that is the information that they said they used to confirm that I was not a Winner of this drawing as I thought I was . . .![]()
NOW - This is absolutely NOT A Complaint . . . It is just a thought & possible suggestion - based on "My" Personal Opinion . . . Although I know, from what has been said previously, that these Manufacturer's contest/drawing and the winners being chosen has been somewhat a "Trial & Error", especially given the size of the prize pool and with the amount of People - both within ECF and from Social Media sites entering . . . I really hope that what has happened in these past few major contest that the learning curve for any/all other future Contest/Drawings like these will be handled just a little differently . . . Maybe even have a couple of selected ECF Members become "Contest Helpers" (Like @NancyR and @FringeChief68 to only name 2 possibilities) to work directly with the sponsors, especially to cut down on the confusion, keep the thread updated, and to assist throughout the process . . . IMO - A Contest really shouldn't be so labor intensive, nor based on obtuse responses or speculation - It most definitely NEEDS to be, without a doubt - FUN - for everyone. . .
