All of the things we heat up with our coils cause that gunk to build up, some things worse than others.
PG and light flavors tend to do very little, VG and heavy flavors (dark) tend to gunk it up faster.

As far as twisting/braiding kanthal, it's pretty much not worth it. If you want the benefit of lower resistance but have a lot of thinner gauge wire, just lay 2 wires down side by side on the wick so its like a double helix. Twisting/braiding just get the gunk stuck in the grooves worse than single wire and you don't gain much surface area.

Another very good option is kanthal ribbon. 0.5x0.1 is on par with 30awg wire, 0.8x0.1 is on par with 28awg wire. I believe 0.4x0.1 is about the same as 32awg.

The "on par" means similar resistance per distance, so a 5 wrap of 0.5 will be similar to a 5 wrap of 30awg.
