Ima hold ya to it I have a rack of st. louis in the freezer. It is such a process, although worth it. 2 days to defrost, a day to marinade or dry rub, and a day in the smoker. Gotta plan it days in advance and pray nothing interrupts the process!

Ours is a fast process since competition meat has to be unseasoned until inspected, usually by 6pm the day before turn-ins. So everything has to be cooked and to the judges in about 18 hours. (I'm not gonna send my comp recipe, but I'll put something together when I cook on Sat. Or tomorrow if we are motivated after the show and a nap.)

Well I would be sure you are getting a V2, because all the pics are of V1's. Also with shipping from China you may not end up saving any money on that one.....

The best Boudin in the world is made very near me. The best makers usually have a small Mom & Pop Grocery store in an 80 year old building on a tiny road in the middle of nowhere. If the floors are old worn wooden planks and the entire floor slopes one way or the other, you can be sure that the Boudin is out-of-this-world. If you buy it at Wally World, don't count on it being edible.
Boudin is a type of link sausage, but it isn't smoked, usually. The interior is a kind of rice dressing with rice, green onions, meat and spices. Usually Pork, but sometimes Shrimp or another seafood. It is usually steamed, not smoked. One of the true perks of living in South Louisiana is the great food!!
The best I ever tasted was after my brother-in-law's family slaughtered a pig and made Boudin and various other things.. including Head Cheese... YUCK!
