Nachos are a close second to pizza...sometimes, depending on how much pizza I've eaten lately, they pull ahead into the comfort food pole position!

One of my favorite baked goods. . . (and there are many). . .

Apple Bundt Cake

2 cups
½ cup vegetable oil
2 tablespoon vanilla
2 well beaten eggs
juice of half a lemon
1 tsp salt
2 cups flour
1.5 tsp soda
3 cups chopped apples (Golden Delicious work very well, but any “baking” apple)
1.5 cups chopped pecans

1. Combine first six ingredients and mix well.

2. Combine salt and flour; add to first mixture and combine well.

3. Add apples and pecans to the mixture. You will end up with a batter that is very thick.

4. Bake in a well greased and floured bundt pan at 325 degrees for 90 minutes.

My fave comfort food is a Spanish dish called Crema (or Puree) de Malanga. Malanga, is a starchy root veggie like potatoes and the recipe is very similar to mashed potatoes. Sometimes I add Malanga to my mashed potatoes for extra creaminess. Yummy

3. Since I'm on a local kick, Spiedies! These are chunks of meat marinated in a special sauce, a kind of vinaigrette, then cooked over charcoal. Slapped 'em on a bun with a little cheese, and it's better than a cheesesteak. Especially if you use venison and throw on a little baby spinach as well.
