I was in AFJROTC in HS and I get that about being outranked.... I wanted to be a pilot and fly fighters....When I found out about not being able to fly if you don't have perfect vision (that includes Dyslexia) well that blew it for me...It has held me back for lots of things in my life... At the time it was not as common(or at least not as well diagnosed) and would be retired...

#1 Been away from ECF for a couple days. Congrats GaMntGrl!!! Been sick and unmotivated. Nothing too serious, just feeling pretty crappy. It'll pass in a day or two.

LD, I LOVE the Dia de los Muertos parade (spell check hated that!) One of my favorite Tucson events. I will try to get some good pics of the parade and post them, so you guys can see how kicka$$ it is!
Indeed it is! Wifeys fam is going to come down for the parade, which prob means we wont walk it this year. last year we pushed Levi in the stroller thru the whole thing! It is quite a site to behold. lots of fun, maybe we will dress up this year?

i was hoping to confuse some people, you're too savvy for that!

The turkey is immaculate. a tad (slightly) salty near the skin, but sooooo tender. the salmon is also amazing. i had to battle some severe temperature changes/fluctuations, the smoker is supposed to run at 225-250 degrees and at a couple times id go check it and it would be at 350+ and id have to turn it off, open the door and wait for it to drop before starting it again! the higher temps cause the salmon (or any fish) to secrete a white substance which can cause it to dry out, and even though this happened it was still really tender. The temp changes were due to three factors.
propane is hard to control an even temp with only a dial that is already in it lowest position.
the water tray would evaporate and need to be replenished.
the wood ships would get above smoldering and actually ignite the wood, not an all out fire, but burning beyond what is intended.

it was worth it. 1 day of brining and 1 day of smoking, with a ton of leftovers.
i also invited my father and his wife over for an early dinner yesterday of salmon, turkey and potatoes. it was the first time in all these years i cooked them a meal. they were quite impressed.

I have a brinkman smoker and smoked everything that has fur,feather,fins and most things hit by my truck.Turkey is great smoked.

I've always wanted to smoke a turkey... i've done pork and chicken... never turkey. I imagine the Turkey would be faster than a pork ...., but longer than a chicken.
the first time i smoked a turkey it was a 20+ pounder and took 8-10 hours. this time i chose a tiny bird of just over 6 pounds and it took about 5 hours.

i actually ran out of propane! i got the internal temp up to ~155, decided it would take another 40 min or so. went back 40 min later for another reading and it was down to ~152 !! the propane had just shut off, so i decided i'd move it to the oven, thought to slice into it first to check its doneness and it was good to go, didnt have to put it in the oven. (i didnt want to use the oven) so i assume it cooked another 20-30 min before the propane ran out. impeccable timing.

I'm not sure I could tolerate participating in that.

It definitely takes a very special person to handle the military. As a military brat, I can say we had a very good life but my dad was not always home and not always able to get away for the family things. No matter. I am so proud of him and his service to our country that it was worth it. We were very lucky. He retired before he was sent to Nam. His attitude was that he had already done his war time and was too old to handle another tour. Then he found his dream job in Civil Service and it was just all good. I know it has not been as pleasant for everyone in the service.

1: Good afternoon all.
I have smoked a turkey for Thanksgiving, to do it "right" it takes somewhere from 8-12 hours depending on how many pounds there are. I am thinking of a full turkey though with those numbers. If you want to have a great tasting smoked meat go with mesquite wood as well as hickory. The two meld together to make it somewhat sweet but still smoked. It is hard to say what the flavor is really like but you likely will not be disappointed.

We use mostly applewood. We keep the dead wood from our apple tree and use it in the smoker...also have used the crabapple wood. It is good as well. Of course, the mesquite and hickory are here for variation. Gonna grab some pecan wood and try that.

Anyone here fry turkey? We love the fried turkey we make. I swear that it is not as greasy as the baked turkey. Seems as though the fat under the skin fries away in the oil and leaves crispy skin and succulent meat. Now I am hungry.

2: I have had a fried turkey and it was actually very good. I could see how in doing it for some time that going back to simple cooking would be good again. Like you said the skin is crispy and very tasty, the meat is done very well and juicy.

I have used the apple wood as well and it makes a different taste, and it is good. We have also tried cherry tree wood and again it was different but still good, but IMO not as good as apple, mesquite or hickory.

If we don't get off this topic I may have to go and buy a turkey and cook it...... :facepalm:

You hear about people causing small fires from deep frying turkey, but I caught mine on fire using my oven.

I managed to set my oven on fire the first year i cooked a turkey...the turkey juices leaked out of the pan and I had huge flames inside my oven. My brother in law threw baking soda on the bottom and it went out ...everyone ended up ok even the turkey.
