Sorry, tried to attach a chart. Didn't pan out so well. Search for vaping ohm chart and it should give you a good guideline for safety and all that jazz...

2.5 ohm or 3.0 ohm single coil cartomizers will allow you a wider range of wattage (voltage).

In the chart below, the numbers in the tiny boxes represent watts. The numbers in the left verticle column represent ohms. Find the ohm and match the watts in the green zone and you'll be good to go.

So according to this chart, if I get a cartomizer with a resistance of 3.0 I should only vape with a wattage of 7.0, 8.0 or 8.5 (my mod only has 7.0, 8.0, 8.5, 9.0, 9.5, 10.5, 11.0,12.0 and 12.5)? Am I getting it right?

Right. These charts are meant to be used as a general guideline; nothing written in stone. The average vaper vapes between 7 - 8 watts.

Myself, I prefer a cooler vape and I use voltage (Provari). I use 3.0 ohm cartos around 3.8 - 4.2 volts the majority of the time, which equates to just 5 - 6 watts.
