When I first vaped I had the same issue, but it went away after a week/10 days. I have gone back to smoking, for a week or so, twice since I've been vaping (strangely, I don't feel as devastated by some that I've done that thing), and each time I have gone back to vaping, the same thing has happened: for about a week, as soon as I inhale the vapour as far as my throat, I start uncontrollably coughing and spluttering.

I think that it's simply that the analogues damage your throat to the point that it's red-raw, but by some mechanism anaesthetise it at the same time. As soon as I've been vaping long enough for my throat to recover it's all good.

Some juice I have tried is just bad stuff. Most of the stuff you get at a smoke shop is bad, made with cheap ingredients. If you have a real vape shop close to you go in and sit down with someone. They will be more then happy to help. Try out all of their juice and see what kind of mixture and flavors you like. With me, I have to have a 100% VG or as close to it as I can. PG is hard on my sinuses for some reason. Try out 0 nic and go up until you find your sweet spot, mine is 6 but when i started I was told to start at 24 and I almost died coughing so don't just jump in at 24 (imo). I now vape on a Dark Horse at .2ohms and go through batteries every 3 hours but as i get the cigarettes out of my lungs I'm sure I'll be able to cut that back a little. Also when I first started I coughed up a lot of tar so be ready for that as well. Hang in there you'll love it once you find you juice and sweet spot!

Maybe try to switch to lighter e-liquid. Not necessary just the nic level. It could be PG/VG ratio or flavor. I never had choking issue but when i try to get my friends to vape, they all kind of choke and cough. What i notice is when i switch the flavor to a more fruity 1, they no longer choke. Maybe the flavours you using just doesn't cut in for you. Try switching to another flavour.

I'm coughing anyway as I have bronchitis. So with that and getting used to vaping and my lungs clearing out from the real cigs, I'm having a right old time. Not to mention the morning breezhaler my doc prescribed which sets me off as soon as I inhale. The evening one is much milder. So much coughing my ribs hurt.

If I had my life over again, I would never have started smoking.
