What are kefir grains?
Kefir or kephir, alternatively milk kefir or búlgaros, is a fermented milk drink made with a yeast/bacterial fermentation starter of kefir grains, that originated in Russia and the northern parts of the Caucasus Mountains. It is prepared by inoculating cow, goat, or sheep milk with kefir grains.

Don't know that I would use inoculating as much as fermenting. The grains sit in the milk for about 24 hours then you separate and use the kefir.

I think the only reason they call it "grains" is because they don't want to say "weird rubbery firm-snotty-booger-like fungia-bacterial globs" (which are fun to chew! . . . .. errrm, :blush: the grains . . . not the other thing)
scoby...symbiotic colony of bacteria and yeast.
