A 3 ohm coil at 4.5v draws 1.5 amps, a 2 ohm coil at 3.5v draws 1.75 amps so, theoretically, a battery should last longer with the 3 ohm coil

Good point. My wattage example was based on power applied, your example is based on work performed.
The relation is linear.
Watts=Volts x Amps. Whereas Amps= Volt/Watts.
My 2 examples in my earlier quote are not great..... 3.0Ω@4.5=6.75W and 2.0Ω@3.5=6.25W So you are correct. 6.25W (1.5amps) should last longer.
