I'm looking to purchase a mod and feel like I have a pretty good handle on it but have one question. How important is it that the mod goes up to 6V instead of 5v? What will that extra volt do for me? I've watched and read reviews on the iTaste MPV and one negative that seems to be mentioned often is that it only goes to 5v and the reviewers wished it could go to 6v.
Does having that extra volt allow me to use a wider range of atomizers? Or provide a wider range based on my vapor tastes?

    More ohms, more volts.

There is plenty of delivery devices out there to choose from to not make the 5v limit a problem, so if you like the device otherwise, go for it. The only things which you'll be limited on is high resistance cartos and attys and dual coil cartomizers. even the 1.5ohm dual coil cartos, when I used to use them, I ran at 5.5v. I never even tried the 2.5ohm dual coils.

I have never vaped over 5V. I own several mods that will permit it, but the highest I have ever set my voltage to is 4.5 or 4.6, and even then, not for long. You would have to have a very unique vaping profile for this to ever bother you.

It is not a practical consideration, in this lion's opinion.
