A new "What's for Dinner?"

I use Bear Creek soup mix, of course I add to it! Potato's, carrots, celery and onions. We also add finely chopped ham for Mike..it's not dinner without meat according to him! I boil the veggies first and then add the soup mix and ham. Since there is only two of us...we just make half of the mix at a time. The mix makes 8 cups.

Tonight, BBQed chicken, green beans with a dab of bacon grease for flavor and D.J.'s pototas.
Those I learned while working for D.J.'s oyster bar. Boil some diced up potatos, drain when done, add butter(don't be stingy..you can use margerine) garlic powder..do be stingy, and parsleychoped up. Mix until creamy but not all the way to mashed..there should be some chunks. I was out of parsley (fresh) so I clipped some garlic chives and used kitchen shears to chop them up in small bits..for color and flavoring.
This dish is great with fish dishes and BBQ..takes the place of potato salad and slaw.

Dinner tonight was BBQed chicken, green beans with a dab of bacon grease and D.J.'s potatos.
I learned to make this dish when I worked for D.J.'s Oyster Bar in Tampa.
It's cubed potatos boiled. When they are soft drain the water and add butter. (don't be stingy! You can use margerine if you prefer) Add garlic powder..you may want to be a bit stingy here..depends on who you are kissing!
Add chopped parsley..it's just for color and to nutralize the garlic breath...JK
I didn't have any fresh parsley so I used some garlic chive from my gardenette.
Stir until creamy..NOT mashed, there should be small chunks of potatos.
This dish is a great sub for potato salad or cole slaw for fish dishes or BBQ.

DJ's potatoes sounds yummy, MK! I tried a new recipe last night (Garlic Alfredo Tilapia) and it came out realllyyyyyy good. I served with steamed brown rice and a garden salad...both hubby and daughter loved it :party:

It was really quick and easy...the perfect weeknight "I AM IN NO MOOD TO COOK" recipe, lol...here it is in case anyone wants to try:

MK you are making me drool.....I had salad. I am trying so hard to be good and lose some weight.

I'm right there with you, Fudgey. I have gained 20 lbs. since I got married 3 years ago 8-o Trying to make healthy(er) food choices, and I've been doing better with that. The problem NOW is that I can't seem to get off my ... to exercise! Diet just isn't enough for me...I need to start exercising. :-x
