A new "What's for Dinner?"

Yep opening cans is great. Here's my favorite recipe for opening cans with the exception of browning 1# of hamburger and throwing an onion in your chopper. And instead of using a crockpot, you can simmer on low stovetop for an hour instead. Everybody I've made this for always wants seconds. (You'll be opening 7 cans.) And it freezes beautifully. It's also a pretty healthy recipe and came from allrecipes.com.

Slow Cooker Taco Soup

1 pound ground beef
1 onion, chopped
1 (16 ounce) can chili beans, with liquid
1 (15 ounce) can kidney beans with liquid
1 (15 ounce) can whole kernel corn, with liquid
1 (8 ounce) can tomato sauce
2 cups water
2 (14.5 ounce) cans peeled and diced tomatoes
1 (4 ounce) can diced green chile peppers
1 (1.25 ounce) package taco seasoning mix

In a medium skillet, cook the ground beef until browned over medium heat. Drain, and set aside.
Place the ground beef, onion, chili beans, kidney beans, corn, tomato sauce, water, diced tomatoes, green chile peppers and taco seasoning mix in a slow cooker. Mix to blend, and cook on Low setting for 8 hours. Servings: 8

Possible garnishes: grated cheese, salsa, tortilla chips. I add a dollop of sour cream to mine.

Awesome, glad you're going to try it. Forgot to warn you to use your biggest crockpot. It makes a huge amount.

If you go to allrecipes, there's also one for chicken taco soup, but IIRC, you add green salsa. I made it too, but I prefer the grd beef version. And if you want to amp up the flavor, I've used beef or chicken broth instead of the water (but that means more sodium). Anyway it's an easy recipe you can play with in alterations. Being single, I freeze the huge amount of leftover in single portion containers.

I know what you're talking about with the green bean soup. I do believe it's something like:

3 lb green beans, 1 in. pieces
3 lb potatos, 1 in. pieces
Large onion (or 2, I like onion) also chopped
1/2 lb bacon, chopped up
1 stick butter

1 can of condensed milk, or a cup or so of cream

I think that's everything. Well, salt/pepper to taste, and maybe toss in some garlic? It's been a while, I'd have to call my mom to double check for sure.

Toss everything but the milk or cream into a pot of boiling water, and allow to cook until the potatoes are cooked through. If you're good at guestimating, the water level will be just barely enough to cook everything (really is better to underguess and have to add more if you're getting dry partway through), add in the can of condensed milk, and keep over heat just long enugh to get the milk warm and distributed.

You don't have to use the bacon, or the butter, but at least one or the other is a good thing.


There's another version my mother in law does that is 'healthier' (no milk/cream, lower butter, light on the bacon) but it's not as yummy.


There's also one that involves stewed tomatoes, and that? AMAZING but I don't know how to do it.

That sounds about right but hers didn't have any milk in it. It was soooo good! Or maybe I was just sick of my own bumbling attemps at cooking! I once tried to make rice..I put what I thought we could eat coved by water in a saucepan...needless to say I had rice boiled over everywhere and scorched to boot!
This is why I taught my kids and grands to cook as soon as they could stand on a chair!
