I have some of this from past projects. Can it be used for coil?? Nichrome Resistance Wire 32 AWG Gage 100 Feet for Foam Cutting Heating Etc | eBay

For use as a coil that's fine to use. Kanthal seems to be the most popular but Nichrome 60 & 80 are used too. If I'm not mistaken, Nichrome is the most popular res wire used for making heating coils & has been around for a long time. Most toaster ovens probably use Nichrome. If the guage is too small for what you prefer you can always twist it.
