Another old recipe from the 50's....For all you chocolate lovers out there you can't get much more chocolate than this. It's a chocolate cake filled with chocolate pudding, topped with chocolate frosting and chocolate cake crumbs. Chocolate heaven!
BLACKOUT CAKE
Chocolate pudding ingredients:
1 ¼ cups Sugar
¼ cup Cornstarch
½ tsp. Salt
2 cups Half & Half
1 cup Milk
6 oz. Unsweetened Chocolate, chopped
2 tsp. Vanilla Extract
Cake ingredients:
8 tbsp. (1 stick) Unsalted Butter
1 ½ cups All-Purpose Flour
2 tsp. Baking Powder
½ tsp. Baking Soda
¾ cup Cocoa Powder
1 cup Coffee, brewed
1 cup Buttermilk
1 cup Light Brown Sugar
1 cup Sugar
2 Eggs
1 teaspoon Vanilla Extract
Frosting Ingredients:
8 oz. semisweet chocolate, chopped
2 1/2 tablespoons unsalted butter
1/4 cup hot brewed coffee
2 teaspoons light corn syrup
1/2 teaspoon vanilla
Make chocolate pudding filling: Whisk sugar, cornstarch, salt, half & half, and milk in a saucepan set over medium heat. Add chocolate and whisk constantly until chocolate melts and mixture begins to bubble, about 2 to 4 minutes. Stir in vanilla and transfer pudding to a bowl. Place plastic wrap directly on the surface of the pudding and refrigerate until cold, at least 4 hours.
Make cake layers: Adjust oven rack to the middle position and heat to 325°. Grease two 8 in. cake pans. Whisk flour, baking powder, baking soda, and salt in a bowl. Melt butter in a saucepan over medium heat. Stir in cocoa and cook about 1 minute. Take off the heat and whisk in coffee, buttermilk, and both sugars until fully combined and sugars are dissolved. Whisk in eggs and vanilla, then slowly mix in the flour mixture. Divide batter evenly between the prepared pans and bake approximately 30-35 minutes. Cool layers in the pans for 15 minutes, then remove and finish cooling to room temperature on a wire cooling rack for at least 1 hour.
Split the layers in half horizontally with a serrated knife. You will then have four layers. Crumble up one layer and set aside. From the three remaining layers, place one layer on a cake plate. Spread with half the pudding. Place second layer on top, and spread with remaining pudding. Place the third layer on top and do not frost. Rrefrigerate while making frosting.
Make Frosting: In the top of a double boiler, melt chocolate and butter. Remove from heat, whisk in the coffee, corn syrup and vanilla. Transfer double-boiler top to an ice bath and allow mixture to chill, whisking often until thick, but spreadable. Using a long, flat spatula, ice cake completely including top layer. Press cake crumbs onto top and sides. Serve immediately or refrigerate for up to 24 hours. Bring to room temperature before serving.

I love breakfast for dinner. That is what we call a deconstructed omelet-lol. I use bacon grease to do the onions, peppers and mushrooms and once I add the eggs I put in a half ounce of water and cover to steam cook them! Only good for someone that likes runny egg yolks.
