Okay, I may hafta leave -- you people EXercise?!?!?!?!? That's just SICK -- don't they have a 12-step program for that?! LMBO :laugh: I won't even open the "fit" THREAD!! hahahahah Seriously, years ago there was a commercial where the punch line was "I'm in no condition for physical fitness" -- that's me in a nutshell!!

I have TONS of good cake recipes -- baking was always my speciality. Don't bake much anymore, but I'll dig 'em out and start posting them here and there. They're almost all scratch cakes, but worth the extra effort. Anyone here for my divine Fudge Cake -- the icing's just soft, homemade fudge! Or the best carrot cake you ever put in your sweet little mouths? Don't touch that dial -- they're coming soon! Donna

P.S. How about pies? They're my whole family's specialty.

Some of us have to exercise.....just gives us an excuse to have a piece of cake or pie or chocolate :laugh:

CES, that's more my pattern! lol I used to watch exercise videos, trying to get motivated -- enjoyed watching them, but it never worked! Ha! I do a lot of physical labor and, while most of it isn't aerobic, it does the job for muscle and some flexibility. Toting 50 lb. bags of goat and horse feed is a pretty good workout. Aerobic is my prob -- strength and flexibility exercises I can get myself to do when I put my mind to it, but I hate walking, biking, etc -- the aerobic stuff!

P.S. Years ago I spent a LOT of time in AL, but on the coast -- had in-laws in Robertsdale. Love the folks there -- friendly, hospitable, just like Texas.

Oh, YES, please, funnyfarm! I am a pie girl!!! As a child I always requested pie for my birthday rather than cake. I mean, cake's great, but PIE????? No contest!

Hi Lisa!

Your post made me realize that a lot of my pies are just notes from my Mom, but I still have lots of recipes, too. What kinds do you like and I'll see what I have. I was thinking of my peanut butter/chocolate cheesecake for a firstie. It's actually kind of a quick and easy and SUPER rich and yummy.

Note: My mother was one of those old fashioned southern cooks who just dumped everything in a bowl or pan or pot and "eyeballed" it! lol I know she had to make about 5 pots of gumbo before she FINALLY remembered to measure everything and write it down for us 3 girls. Now she doesn't cook -- eats out and, as she says, dusts the stove! ha

Hi Everybody!

Okay, CES, just for you!

Crust
1-1/2 c. chocolate graham cracker crumbs
1/3 c. sugar
1/3 c. melted butter (real butter)

Combine these 3 thoroughly and press into large pie pan. Bake 10 min. @ 350 deg
OR
substitute 2 storebought choc. graham or cookie crusts (this is a BIG pie!)

Filling
16 oz. cream cheese, room temp.
One 17.3 oz jar creamy peanut butter
1-3/4 c. sugar
1 c. heavy whipping cream, stiffly beaten

Mix cream cheese and peanut butter, then thoroughly mix in sugar (I use an electric mixer). Fold in whipped cream and spoon into cooled crust. Refrigerate until nice and cool before topping.

Topping
1/3 c. sugar
2/3 c. heavy whipping cream (NOT whipped)
3 oz. semi-sweet choc. chips
1 stick real butter
1 tsp vanilla

Comgine sugar and heavy cream in heavy saucepan and bring to a boil over medium heat. Reduce heat and simmer for exactly 7 minutes, stirring occasionally. Remove from heat and add choc. chips and butter, stirring until melted. Stir in vanilla. Cool until fairly thick (spreadable, but won't drip down the sides of the pan). Pour as evenly over the pie as possible.

Refrigerate at least 4 hours -- overnight is better.

Notes
I make my own crust because it's much better, but feel free to use the 2 bought crusts. It will take two because they're small and this makes a BIG pie. ONLY use real cream and butter, as far as I know, because it affects the flavor. I use Hershey's Special Dark Choc. Chips and Mexican vanilla, but that's a "to taste" choice.

It's to DIE for!! Oh, and just for you, check a package of Hershey's Special Dark Chocolate Chips and see if it has the Decadent Truffle Bottom Chocolate Cream Pie recipe. If it does, by them and make it -- if it doesn't, let me know and I'll post it. It's so chocolatey and rich it's like candy in a pie shell!!! And it's a quick and easy, to boot! Donna

OK, so, technically this is bread, but it's like a cake. LOL!

Cranberry Pumpkin Bread

3 1/2 cups all-purpose flour
1 cup packed brown sugar
2 teaspoons baking soda
1 teaspoon baking powder
3/4 teaspoon salt
1 teaspoon ground cinnamon
1/2 teaspoon ground cloves
1 cup egg substitute
1 (16 ounce) can whole cranberry sauce
1 (15 ounce) can pumpkin puree
1/3 cup vegetable oil
1 tablespoon orange zest
2 tablespoons chopped walnuts

Preheat oven to 350 degrees F (175 degrees C). Spray two 8x4 inch loaf pans with non-stick cooking spray.
Combine the flour, brown sugar, baking soda, baking powder, salt, ground cinnamon and ground cloves in a large bowl and mix well. Set aside.
Mix the egg substitute, cranberry sauce, pureed pumpkin, vegetable oil and grated orange zest together. Add this mixture to the flour mixture and stir until just moistened. Pour batter into the prepared pans. Sprinkle the top of each loaf with the chopped nuts.
Bake at 350 degrees F (175 degrees C) for 55 to 60 minutes or until a toothpick inserted in the center comes out clean. Let loaves cool for 10 minutes then remove from pans. Can be made even lower in fat by substituting 1/3 cup applesauce for the 1/3 cup vegetable oil.

Because I roll this way... this makes 20 servings. Each serving is 209 calories and 4.9 grams of fat, as is.
